The Bayou marshes may be inhospitable, but they're not uninhabitable. However, you have to have a certain kind of toughness to survive there. This toughness is the central characteristic of the Cajuns, the descendants of the French refugees who arrived there from Canada over a century ago. They've developed a rich and colourful culture most vividly expressed through their food and music. This series focus on the one month a year that they go alligator hunting.
